My Almost Famous Chocolate Walnut Cookies

 

I've decided to FINALLY post the recipe for my Chocolate Cookies. My parents, husband and housemates are quite literally addicted to these. These are NOT super sweet sugary cookies. They have the flavor of a wonderful dark chocolate with some tasty additions to them. If you want them sweeter, add about a 1/3 cup more sugar to the batter. Anyway, enjoy them with milk or coffee or beer or water... insert your choice of beverage here. I suggest, however, making a lot of them. They tend to disappear quickly. Cheers!

Makes about 12-15 cookies, depending on how big you make them.

Prep Time: 10 minutes

Cook Time: 11 minutes

Total Time: That's on you and how fast you feel like getting them in your mouth after they're baked; but about 30 minutes.

INGREDIENTS

  • 1/2 cup unsweetened cocoa powder

  • ½ cup peanut butter (optional, but not the natural kind, it won't work... you choose your chunk level)

  • 1 cup white granulated sugar or sugar substitute of choice

  • 1/2 cup (one stick) melted butter

  • 3 tablespoons vegetable oil

  • 1 egg (or 4T of Just Egg brand substitute) *not sponsored

  • 2 teaspoons pure vanilla extract

  • 1 1/3 cups all purpose flour (I haven't tried any flour alternatives yet, so sub at your own risk)

  • 1/2 teaspoon baking powder (POWDER... not soda. Powder.)

  • 1/2 teaspoon salt

  • 1 teaspoon instant coffee (optional, but it brings out the chocolate flavor)

  • ½ cup pretzels (roughly chopped, optional)

  • ½ cup chopped walnuts (optional)

  • ½ cup chocolate chips (optional)

INSTRUCTIONS



  • Preheat oven to 350°F (175°C). Line 2 cookie sheets or baking trays (or 1 big one) with non-stick spray or parchment paper (baking paper). I recommend parchment. Why? Because I hate scraping bits of cookie off of the sheets after they bake.

  • In a medium-sized bowl, mix together the cocoa powder, peanut butter, white sugar, butter and vegetable oil. Beat in egg and vanilla until fully incorporated.

  • Add the flour, baking powder, and salt; stir the dry ingredients first before mixing them through the wet ingredients until a dough forms (just until incorporated). Fold in your additions... pretzels or walnuts or whatever you want to put in them. Be mindful to get the bottom of the bowl.

  • The batter will look a little dry, but that's okay. They come out great for me every time. Keep in mind, the more options you put in, the drier the batter will be.

  • Scoop out 1-2 tablespoonfuls of dough with a cookie scoop (or small ice cream scoop), and place onto lightly sprayed or parchment covered baking sheets. Press them down as thick or thin as you want your cookies to come out. 

  • Bake in hot preheated oven for 10-12 minutes. The cookies will come out soft from the oven but will harden up as they cool. (Be careful not to over bake as they will dry out.)

  • Allow to cool on the cookie sheet for 10 minutes before transferring to wire racks to cool. You NEED to do this because they will crumble into tiny pieces if you don't.... trust me. Great if you want cookie croutons, but not so much for cookies.
